Cette partie méridionale du massif jurassien offre des paysages différenciés faisant alterner moyenne montagne et montagne proprement dite, voire bassins intramontagnards (Belley), pour culminer à 1 720 m au Crêt de la Neige. Le lait y constitue depuis longtemps la principale production agricole et alimente des filières de transformation très diversifiées. Certaines sont véritablement d’inspiration montagnarde et produisent pour l’essentiel du fromage de comté. D’autres s’appuient sur une production laitière plus intensive qui alimente depuis plus d’un siècle des outils de transformation industriels localisés à l’intérieur du massif ou en périphérie immédiate et livrant des produits standardisés. La dimension montagnarde de ce système est alors souvent questionnée au sein de ces filières qui se sont massivement restructurées. L’article explique le cheminement de ces filières, dans toute leur diversité et s’interroge sur leur positionnement, cherche à savoir si elles regardent vers la montagne, s’en accommodent ou bien l’ignorent. This article traces the history of the dairy industry in the southern Jura, focusing on its relationship with the mountainous nature of the region. This southern part of the Jura massif offers a varied landscape, alternating between the mid-mountain and the mountain proper, and even intramontane basins (Belley), culminating at 1,720 m at Crêt de la Neige. Milk has long been the region’s main agricultural product, feeding a highly diversified processing industry. Some are truly mountain-based, producing mainly Comté cheese. Others are based on more intensive milk production, which for more than a century has fed industrial processing plants located in the Massif or on its immediate outskirts, delivering standardised products. The mountain dimension of this system is often questioned within these industries, which have undergone massive restructuring.
